Horu soba is a name given by many locals to this dish of yaki-soba with beef entrails (called horumon) esteemed in eastern Tottori for half a century and enjoyed in some thirty eateries and yaki-soba stands from Tottori City outward. If you order ‘horumon soba’ at any particular shop, you may be served any number of different sorts of sauce, entrails, noodles, and other ingredients peculiar to each of the thirty shops, even including a variety made with curry.
