Established in 1909, the Ota Sake Brewery is located along the old main road in Wakasa Town, an area rich in nature with forests covering 95% of the area. Using locally grown sake rice and water, it brews the ‘Benten Musume’ sake. In all brewing processes, the steamed rice is allowed to cool naturally, and the mash is pressed in a kibune (wooden tank), aiming to create a junmaishu (sake without any added alcohol or sugar) that tastes even better when heated. The brewery also offers a range of charming fermented foods, including additive-free ‘amazake’ made from rice, ‘Narazuke’ (a locally produced daikon radish pickled in sake lees for 2 years) and ‘Saba no nare-zushi’, a mackerel narezushi containing no additives and made using traditional methods.
