Suwa Sake Brewery
Founded in 1859 during the Edo Period, this brewery is located in the streets of an inn town in Chizu Town. Close to the Sendai River, notable for carrying sand to the Tottori Sand Dunes, Suwa Brewery draws this underground water from its own well and uses it not only in the brewing process but also for washing bottles. The water quality is very soft, with a water hardness of about 2, and it produces a palatable sake that gently ferments. Its self-owned store, Kajiya, offers tastings and a large selection of recommended foods, seasonings and local crafts to go with the sake.
