Yeast Bread Kosajiichi

Located at the foot of the famous Mt. Daisen, this bakery makes and sells its own natural yeast bread. The yeast is slowly and naturally fermented by the power of underground water and clean air from the mountains. Using home milled, stone-ground Daisen wheat, the dough is made of just flour, yeast and salt to achieve simplicity. The aroma of the wheat and sweetness of the yeast makes it a bread rich in natural flavor. The nearby café Taberu Tokoro serves a ‘yeast plate lunch’ consisting of homemade bread as the main ingredient, while the natural yeast is used in every item.
